Wok Hei Shrimp Egg Fried Rice
Ever wonder how to get that robust and smoky flavor for your stir fry dishes at home? Well, it's all about the high flames and constant tossing. It is possible to get that zi char flavor as long as you heat your wok util it is smoky before adding in the oil. Fried rice is probably one of the easiest recipe which you can achieve that same flavor. You will be surprised that with little ingredients and minimum cooking time, you can prepare the Din Tai Fung fried rice at home too!

Instructions
  1. Add 2 egg yolks to cooked rice. Mix well.
  2. Heat your wok to smoky hot. Add in 2 tbsp oil and throw in the green onions (white part only).
  3. Add in the lup cheong and continue frying till fragrant.
  4. Stir in the eggs and quickly scramble the eggs and push to one side.
  5. Add in the rice mix and stir well.
  6. Push the rice to one side and add in the prawns. Fry the prawns till turns pink. Mix well with the rice.
  7. Add in the chicken powder, soy sauce, spring onions and dash of pepper to the rice.
  8. Stir well and serve hot with sambal chili (optional).
