Singapore Chilli Crab Pasta
D’Open Kitchen’s own rendition of Singapore’s Chilli Crab Pasta Recipe. Chilli crab is an iconic Singapore dish that was invented back in the 1950s. Chilli crab has became so popular that had celebrity chef Gordon Ramsey come Singapore to challenge making this iconic seafood dish. There are so many variations to making this dish and there are many fusion dishes that revolves around chilli crab. This chilli crab recipe of ours with an italian twist is a quick and easy way to replicate the chilli crab taste and to satisfy cravings for Singaporean who is staying abroad.

Crab Meat Sauce
  1. In a large pot, bring water to boil and add in salt
  2. Put pasta to cook for 12-15mins or until al dente
  3. Drain the pasta and set aside for use. Keep pasta water for later use
  4. In a heated pan, add 1 tbsp of olive oil and add in shallots, saute for a min and add in garlic
  5. Add the crab meat in and saute for a few minutes
  6. Add in the samba chilli and tomato sauce. Pour in the pasta water
  7. Simmer for 4-5mins and add in sugar and salt to taste
  8. Add all the pasta in. Mix well with the sauce
  9. Add the beaten egg in and mix with pasta
  10. Dish up and add a poached egg on top of the pasta
  11. Garnish with spring onions and chilli. Add the salmon roe on top of the poached eggs
