Peanut Butter Mochi
Mochi is an iconic dessert in Japanese. It is made from glutinous rice flour and usually stuffed with red bean paste. You can find different variations of mochi in different regions of Japan. In Japan, mochi is traditionally made by pounding repeatedly until it becomes smooth, sticky, and elastic.

Instructions
  1. Mix all the ingredients for mochi in a pot and keep stirring until it forms a white sticky gluey like dough
  2. Cover with clingwrap. Set aside to cool.
  3. Mix the peanut butter filling ingredients together and divide into 15g round balls.
  4. Wrap the mochi around the ball filling. And coat with the grated peanut powder.
  5. Serve!
Recipe Notes

You can add in some sesame seeds with the grated peanut powder before coating the mochi balls for extra fragrant. You can also add 1-2 tbsp castor sugar in the mix if you have a sweeter tooth.
